Cheesy Spaghetti Squash with Shrimp Recipe
Course: Main Course
Ingredients
½ medium spaghetti squash, scoop out seeds and membranes
1 Tbsp olive oil
1 Tbsp butter
1 Tsp minced garlic
1 Tbsp all-purpose flour
1/4 cup parmesan cheese
1/4 cups mozzarella cheese
1/2 cups milk, then a little more if needed
3 oz shrimp
Salt and black pepper, to taste
1 Tsp minced parsley, for garnish (optional)
Instructions
Preheat oven to 400 degrees. Line baking sheet with parchment paper and cover with foil.
Scoop seeds and stringy center portion of from squash and discard or reserve seeds for another use.
Place squash cut side up on the baking sheet. Brush flesh with olive oil.
Bake in the preheated oven until tender, about 1 -1:30 hour (or place in microwave and cook for 10-15 minutes until tender)
Let cool slightly and shred spaghetti squash with a fork and set strings aside.
In a large sauté pan melt butter over medium heat. Add
flour, sauté till the flour turns golden, then add garlic. While whisking vigorously slowly pour in the milk. Let cook, stirring constantly, until just thickened.
Reduce heat to low, add parmesan and stir until melted. If the mixture seems too thick add more milk. Season mixture with salt and pepper to taste. Then add the shrimp and cook for another 3-5 minutes.
Add shredded spaghetti squash and mozzarella cheese and toss to evenly coat (taste again for salt).
Remove from heat. Sprinkle with parsley and serve warm.
