Cuisine – Italian
3 oz of ground beef (zucchini for vegetarian option)
1/4 cup of water
1 Tablespoon of Italian seasoning
2 Tablespoon of diced onion
Salt & pepper
1/2 cup of marinara sauce
1/4 cup of shredded parmesan cheese
1/4 cup of shredded mozzarella cheese
Preheat oven to 400°F.
Line the baking sheet with parchment paper and brush it with oil. Arrange eggplant slices, sprinkle with salt, and brush with oil generously. Bake until golden brown on both sides from 20 to 25 minutes. Remove from oven.
In a skillet mix ground beef with water, add diced onion, Italian seasoning, salt, and pepper, and sauté the mixture over medium heat, while mixing, until it starts to brown. Cover the skillet and cook for about 20 more minutes until the onions are soft and translucent.
Spread half of the marinara sauce on the bottom of the baking dish evenly, arrange half the eggplant, spread the meat over the eggplant, sprinkle half of the mozzarella cheese.
Arrange the second half of the eggplant over the meat, spread the remaining marinara, sprinkle the remaining mozzarella and parmesan, and bake for 10-15 minutes until the sauce is bubbling and the cheese is melted and golden brown. Remove from the oven, let cool for 5 minutes and serve.
