3 oz ground beef
1 teaspoon Italian seasoning
1 tablespoon onion chopped
salt & pepper
1/2 cup marinara sauce
1 zucchini halved
1/4 cup shredded mozzarella cheese
Preheat oven to 350°F.
Slice zucchini in half lengthwise and scoop out the middle containing seeds so that you have long hollow zucchini boats. Dice the scooped-out pulp and save for the sauce.
In a skillet over medium heat, sauté ground beef until it starts to brown. Add Italian seasoning, salt, pepper, and chopped onions and cook until onions are translucent for about 20 minutes. Add marinara and diced zucchini pulp and cook for another 10 minutes.
Fill your zucchini boats with the cooked meat sauce and top with shredded mozzarella cheese.
Bake for 25-30 minutes on 350-400 until zucchini is tender.
